Fish kalia (Maacher kalia)

Hello readers! It’s been really long that I took to writing . A lot happened, many scenarios changed, address changed… In short, things have been a bit hectic!

I have continued my experimentation with recipes, taken photos of few too, but….writing it all seemed quite a strenuous job🙈

Today I am going to share a much-requested recipe. Especially for a very sweet person who has been experimenting with the recipe and is not getting the desired result😊 Don’t you worry, today I share the recipe, and soon you can come for a practical demonstration😃

Fish Kalia

Ingredients:

  • Daurade royale ( or any big size fish)
  • Onion finely chopped
  • Ginger finely chopped
  • Garlic finely chopped
  • Turmeric powder
  • Cumin powder
  • Coriander powder
  • Red chili powder
  • Kashmiri red chili powder (for colour)
  • 3-4 cloves, cardamom and a piece of cinnamon, bay leaf
  • Cumin seeds whole
  • One tomato chopped
  • Yogurt ( I added 125 g)
  • Salt to taste
  • Oil for frying the fish and for cooking
  • Pinch of sugar( for balancing the taste)

Directions:

We start by cleaning the fish, cutting them in pieces, and washing them properly. Sprinkle salt, turmeric powder, and a little red chili powder and smear the fishes pieces properly with the spices. Let them rest for 5-10 mins.

Heat oil in a pan and start frying the fish pieces. Fry on each side till they the sides gets a golden colour. Once done, keep them aside.

Cut the onion, garlic, and ginger very fine.

In the same pan that we fried the fish, add more oil and add a teaspoon of whole cumin seeds and the whole spices (cloves, cinnamon and cardamom), the bay leaf and let them splutter. Add the chopped onion, ginger and garlic, sprinkle salt to taste and keep frying till the onion turn soft and starts turning golden.

Add the chopped tomato and keep cooking till they turn soft and mushy. Add yogurt and the dry spices (turmeric powder, cumin powder, coriander powder, chili powder and the Kashmiri red chili powder), mix them properly and keep cooking till it all become a homogenous mixture and start leaving oil from the sides.

Add water depending on your consistency preference. I added 2 cups. Let it come to a boil.

When it starts boiling, add the fried fish pieces. Turn the fish pieces after a minute. Taste for salt, add a pinch of sugar and switch off the flame. You can garnish it with fresh coriander leaves.

The dish taste delicious served with rice. It can be whit rice, cumin rice, pulao…

Being the lazy me, I always think of an easy and quick fix. I decided to make white rice that should smell like pulao 🤤

Wash long-grained basmati rice and let them soak in the water for 10-15 mins. Take 2-3pieces of cloves, cardamom, a small piece of cinnamon and some whole cumin seeds. Put them in a tea trainer or tie them all in a piece of cloth.

Start boiling water, add few drops of oil,add the soaked rice and the whole spices bundle and let it cook.

The rice when done will have a wonderful smell of all the exquisite spices, without you hitting on them while eating 😃

Drain the rice and served it piping hot with the delicious fish Kalia🤤
