Tasty Coriander Chicken (with a sneaky spinach twist😉)🤤

You people out there having a ”we prefer nonveg” households would understand my predicament 🙈 It’s a real challenge deciding what to make for dinner🤔 Things get really tough when you are nonvegetarian but don’t eat pork or red meat🤷‍♀️ the only meat option is chicken 🐥 so the cook has to get innovative and experimental😉

So today I decided to try Coriander chicken with sneaky Mommy healthy twist😂 Since coriander leaves and spinach both are green in colour, why not take advantage of it😈!!!

Coriander spinach chicken 🍗

Ingredients:

  • Chicken (cleaned and cut into medium-sized pieces)
  • Coriander leaves
  • Coriander seeds (whole)
  • Green chilies
  • Cashew nuts
  • Baby spinach
  • Ginger and garlic paste or chopped fine
  • Red chili powder
  • Turmeric powder
  • Cumin seeds (whole)
  • Salt to taste
  • Yogurt
  • Pinch of sugar

Directions:

We start by making a paste of coriander leaves, whole coriander, green chilies, cashew nuts and spinach leaves 😉

Prepare a paste

Heat oil in a pan and add the whole cumin seeds. Let them splatter for a minute, then add the chopped ginger and garlic. Fry till they start changing colour, and add in the coriander paste.

Little oil on the sides

Keep cooking till you see little oil on the sides and add the chicken pieces. Now it’s time to add the dry spices: turmeric powder, red chili powder and salt.

Add the chicken and dry spices

Mix well and cook covered for 10 minutes. Now is the time to add the yogurt.

Add yogurt

Cover and cook for 15 minutes or till you satisfied the chicken is cooked through and the spices have blended in well. Keep an eye and check and stir in between to prevent burning.

Taste for salt and add in a pinch of sugar before switching off the flame.

Delicious coriander chicken is ready to be served with hot rice or roti!

Trust me when I tell you, if you don’t tell nobody gonna know you added Spinach 😃
